Fried Zucchini and Tomato Sandwiches Are a Taste of Summer

Last year my husband introduced me to the wonders of a fried zucchini and tomato sandwich and now I equate the sandwich with summer.  It stands along side the BLT as a great summer meal when you don't want to make the house any hotter than it already is and it is a great meal for using up the always over productive zucchini.  I can hardly call how to make these easy sandwiches a recipe but I will relay to you how to make your own sandwich.

"Recipe" for Fried Zucchini and Tomato Sandwiches

Sliced Bread
Zucchini- thinly sliced
Tomato- thickly sliced
Saltine Crackers- crushed
Egg- beaten
Vegetable oil
Salt & Pepper

Heat aprox 1/4 in of vegetable oil in a frying pan.  Dip zucchini slices in egg and then coat with the crushed saltines.  Fry zucchini slices till golden brown, flipping once. Layer the tomato and fried zucchini on a slice of bread, salt and pepper to taste and top with a second slice of bread. Enjoy your taste of summer.

Variation: you can toast the bread or add a little mayo if desired.
